About the producer: Wilton Benitez is a renowned Colombian coffee producer celebrated for his innovative and precise approach to coffee processing. Working from his farms in the highlands of Cauca and Huila, Wilton combines sustainability with science to craft exceptional coffees. He is best known for his unique “thermal shock” method, a process where coffee beans are rapidly exposed to hot and cold water to preserve complex aromas and clarity in the cup. Through controlled fermentation using selected yeasts and anaerobic techniques, he creates vibrant, fruit-forward profiles with notes of tropical fruit, berries, and florals balanced by chocolate undertones. Beyond his own production, Wilton shares his expertise with other farmers, helping elevate the quality of Colombian specialty coffee worldwide.
